In today’s door, Ella has a special holiday recipe that she would love to share with you:
This cozy soup is sure to inspire your taste buds and your get-togethers with good tidings! My mom makes it throughout the winter months and it’s always a great addition to the holiday meal. It’s quick and simple to make, but don’t be fooled because it’s luxurious and flavorful as ever. Coming home after skiing or a chilly winter walk to a bowl of this soup is the perfect way to cap off an epic time on the mountain.
In a large pot, heat 3 tbsp oil over high heat until hot and shimmering. Add onion and garlic, and sauté until golden, about 4 minutes. Stir in tomato paste, cumin, salt, black pepper, and chili powder or cayenne, and sauté for 2 minutes longer. Add broth, water, lentils, and carrot. Bring to a simmer, then partially cover pot and turn heat to medium-low. Simmer until lentils are soft, about 30 minutes. Taste and add salt if necessary. Garnish with fresh chopped cilantro and lemon, serve with garlic toast, and Dust with chili powder if an extra kick is desired. Serves 4.
